For a brief moment of time, I had this very best friend with the last name of Burgess. This was during our two-year stint living in Atlanta. This very best friend whose first name I can't even remember and I bonded over newlywed angst and pregnancy issues. We knew nothin' about nothin' and were young enough to think we knew it all.
The single thing from this friendship that survived the years was her chili recipe which I dubbed Chili O'Burgess. Hence, I never forgot her last name. Mrs. Burgess, if you're out there, find me on facebook, I'd love to get back in touch.
1 - 1 1/2 lb hamburger, cooked and chopped in chunks
6-7 8-oz. cans of Hunts tomato sauce
1 6-oz. can tomato paste
1/2 tsp parsley
1 tsp. oregano
2 Tbsp. garlic
2 Tbps. chili powder
2 cans kidney beans
Cook as long as possible......
I usually double this recipe and freeze some. Oh, and one time? I entered it in a contest and won first place for "best looking chili."
Oh, another time? With wild abandon, I added these ingredients and it wasn't too bad:
2 squares unsweetened chocolate, grated. (because: why not?)
1 1/2 Tbsp cumin
2 Tbsp paprika
2 Tbsp soy
1 1/2 Tbsp vinegar
4 Tbsp Texas Pete hot sauce
