I just tried a new recipe from Rachael Ray's June/July 2011 issue, just in the nick of time for a Tasty Tuesday post. The recipe sounds bizarre, don't be afraid. It was yummy. Tom gave it the "once-a-month" thumbs up. I gave it the "once-every-7-weeks" thumbs up.
Chicken Meatballs with Sweet Peanut Sauce
1 lb ground chicken (I know! Who knew?)
1/2 c chopped cilantro
1/4 c dried breadcrumbs
1/4 c grated onion
2 cloves garlic, grated
1 tsp. salt
1/2 tsp. pepper
2 Tbsp vegetable oil
1/4 c peanut butter
2 Tbsp. soy sauce
3 Tbsp. sugar
3 Tbsp. sesame oil (I used Olive Oil)
Chopped peanuts for garnish (I opted out)
Mix first 7 ingredients together and form into small meatballs.
In medium skillet, heat oil over medium heat. Add meatballs and cook through, 6-8 minutes.
Meanwhile, mix remaining ingredients (except peanuts) and warm in microwave. Toss meatballs with half of sauce and sprinkle with peanuts. Serve with remaining sauce for dipping.
