Every Spring, Eva and I watch the buds appear and blossom, checking their progress every couple of days; this is what Grandmas do with grandchildren. We stroll about, sniff this and peer at that and say things like .. "This is just a mild spring zephyr compared to the big wind of '67. Or was it, uh, '76? Oh, well, no matter, It was the year Aunt Clara went to visit her cousin. Now her cousin was not only gifted on the glockenspeil....." Woops, I digress. We watched the blossoms on the peach tree turn into little, tiny green peaches and we watched these ripen into sweet, yummy, fuzzy peaches. She climbed up on a ladder, reaching into the upper branches, amid the honey bees while I crawled down under the low branches amid the angry red ants.

When we had a sackful of peaches, we ran into the kitchen and began the delicious work of making peach cobbler, on a weekday, for no special occasion; for this is what grandmas do with grandchildren.

The peach cobbler was amazing, as expected and I wanted to share the recipe with you. It's a Paula Deen recipe from one of her older books I received when I first visited her Savannah restaurant before she became mega ultra famous. Paula was there, at the restaurant, that day and I was able to walk right up to her and get her autograph in my recipe book. She's so nice and all, she even has her own nickname for me. Cool: I know. "Valeria." She calls me "Valeria." It's right there in the front of my recipe book: "Dear Valeria, Best Dishes! Paula Dean" with a smiley face after her name.

Clean, peel & core 2 c fruit and mix with 1 c sugar and 1 c water. Bring mixture to a boil and simmer for ten minutes. Stir often.

Preheat over to 350. Put 8 Tbsp butter in a deep baking dish and place it in oven to melt. Mix 1 c sugar and 3/4 c self rising flour, add 3/4 c milk slowly to prevent lumping. Pour this mixture over melted butter, do not stir. Spoon fruit mix on top, gently pouring in syrup. Do not stir. Bake for 30 -45 minutes. Serve with vanilla ice cream on top.

Don't know why, but something told me to give Paula's recipe a whirl...liked her better years ago before she became so mega famous. And afterall, I've been baking cobblers for 25 plus years, so what could be so great about this cobbler to make Pooky post it. Tried it Sunday afternoon and absolutely LOVED IT! Hands down the best I've ever made. Ready to try apples this next time knowing all the while it will be a slice of heaven. Thanks, Val!!!
